Cucumber Tomato Avocado Salad

A simple cucumber salad packed with fresh tomato, avocado, and onion.

- 1 large English cucumber
- 1 medium avocado
- 2 medium tomatoes (I used organic tomatoes on-the-vine)
- 1/4 cup chopped yellow onion
- 1 1/2 tsp lime juice
- 1/2 tsp lemon juice
- salt to taste (I used Himalayan pink salt)
- black pepper to taste
Finely chop your cucumber, avocado, yellow onion, and tomatoes.
Add the chopped cucumber, avocado, tomato, and onion to a large mixing bowl.
Mix all ingredients to combine thoroughly.
Add in the lemon and lime juice, and mix again.
Add salt and pepper to taste.
Serve the salad up with chips, crackers, on top of rice cakes, or with whatever else you'd like!
