Simple Vegan Chia Pudding

Simple chia pudding that is subtly sweet, packed with nutrients, and the perfect vegan snack option.

- 2 tbsp chia seeds
- a dash of cinnamon
- 1/4 cup fresh sliced strawberries (or other fruit of choice)
- 1/4 cup + 2 tbsp non-dairy milk (I used unsweetened vanilla almond milk)
- 1/2 tbsp pure maple syrup
- optional toppings (I added a chopped peanut butter cup)
In a small bowl, mix together the non-dairy milk, pure maple syrup, and cinnamon.
Add the chia seeds and mix again until well combined.
Cover the mixture and refrigerate it until a thick, gel-like consistency is achieved (at least one hour).
When you're ready to eat your chia pudding, add the strawberry slices and any other desired toppings (I added a peanut butter cup on top of mine).
Dig in and enjoy!
