- 1/2 cup rolled oats
- 1/4 medium overripe banana (plus more for topping)
- 1 tbsp crunchy peanut butter (for topping)
- 1/2 tbsp chocolate chips (plus more for topping)
- 1/4 tsp baking powder
- 1/4 cup + 3 tbsp water (can sub nut milk)
- pure maple syrup to taste (for topping)
Preheat the oven to 350° F.
Add the oats, baking powder, banana, and water to a high speed blender.
Blend for about 30 seconds until a smooth oatmeal batter forms.
Pour the oatmeal batter into a mixing bowl.
Gently fold in the chocolate chips.
Transfer the oatmeal batter to an oven safe dish or ramekin.
Top the mixture with more chocolate chips and fresh banana slices if desired.
Bake the oatmeal for about 20 - 25 minutes, or until your desired consistency is achieved.
Top the oatmeal with the peanut butter and pure maple syrup to taste.
