Peanut Butter Chocolate Chip Baked Protein Oatmeal

A healthy, vegan, baked oatmeal recipe with chocolate chips, peanut butter, and no banana required.

- 1/3 cup quick oats
- 2 tbsp peanut flour (I used organic PBFit)
- 1 1/2 tbsp creamy peanut butter
- 1/2 tbsp dark chocolate chips (I used Enjoy Life brand)
- 1/4 tsp baking powder
- 4 1/2 tbsp water
- 1 tsp pure maple syrup (plus more for topping)
Preheat the oven to 350° F.
Add the oats, peanut flour, baking powder, water, and pure maple syrup to a high speed blender or food processor.
Blend until a smooth oatmeal batter consistency is achieved.
Pour half of the oatmeal mixture into an oven safe dish.
Add 1/2 tablespoon of peanut butter to the center of the mixture.
Pour the other half of the oatmeal mixture on top of the peanut butter.
Add the dark chocolate chips.
Bake for about 12 - 15 minutes, or until desired consistency is achieved.
Add the other tablespoon of peanut butter on top of your baked oats as well as more pure maple syrup to taste.
