Simple, gluten free, dairy free protein waffles made with oats and vanilla protein powder.

- 1/2 cup quick oats (blended into a fine oat flour)
- 2 tbsp vegan vanilla protein powder (I used Orgain Simple in the creamy vanilla flavor)
- 1/4 tsp baking powder
- 1/4 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
- 2 tbsp unsweetened applesauce
- 1 tbsp creamy peanut butter
- fruit of choice (for topping, I used frozen blueberries)
- pure maple syrup to taste
In a mixing bowl, combine the oat flour, vanilla protein powder, and baking powder.
Mix in the nut milk and applesauce to form a smooth waffle batter.
Preheat and grease your waffle iron.
Fill the waffle iron with batter and close the lid.
Cook your waffle for about five minutes, or until golden brown.
Pull your waffle out of the iron and continue making waffles until all the batter has been used up.
Plate your waffles, then top them with creamy peanut butter, fruit of choice, and pure maple syrup to taste.
Dig in and enjoy.
