Good morning friends! Today, I am so excited to share my new favorite breakfast recipe – a single serve cinnamon raisin bagel! I have recently been loving making single serve bagels for myself. They are just so much fresher and tastier than the pre-packaged kind. And while they do take a little bit of extra time and effort to make, I definitely think they are worth it.

Fortunately, once you get the hang of things, it’s quite easy to make homemade bagels in any flavor variety that you want. I’ve already got a number of different flavors in mind to try out. But for now, I wanted to share this cinnamon raisin flavor with all of you. It’s a classic combination that’s so tasty. Plus, this single serve cinnamon raisin bagel tastes so yummy with some creamy peanut butter and fresh banana slices slathered on top.

  • Bread Flour – The first essential ingredient you will need for this recipe is the bread flour. I use the King Arthur brand bread flour to make all of my homemade bagels and breads. I really like this brand and it’s quite affordable.
  • Coconut Sugar – The coconut sugar adds sweetness to your cinnamon raisin bagel. It is one of my favorite sweeteners to use in baked goods, and this cinnamon raisin bagel is certainly no exception.
  • Instant Yeast – The instant yeast is used to ensure your bread dough rises while it rests for an hour or two. I find that instant yeast is very easy to use, and it works very quickly. That’s why I use it for many of my homemade breads and other baked goods, like this homemade cinnamon raisin bagel.
  • Raisins – The raisins add a ton of sweetness and flavor to this cinnamon raisin bagel. You certainly can’t have a cinnamon raisin bagel without the raisins.
  • Cinnamon – The cinnamon adds spice and flavor to this cinnamon raisin bagel. It is an essential ingredient that you definitely don’t want to omit.
  • Water – The water serves as the main source of liquid for this recipe. You will want to heat it in the microwave before adding the instant yeast so that it properly reacts with the yeast. This will ensure that your bagel turns out nice and fluffy.

Ingredients
  

  • 1/2 cup bread flour (I used King Arthur brand)
  • 2 1/4 tsp coconut sugar
  • 2 tbsp raisins
  • 1/2 tsp instant yeast
  • 1/2 tsp ground cinnamon
  • 3 1/2 tbsp water

Instructions
 

  • Microwave the water in a large bowl for 15 seconds to warm it up.
  • Add the instant yeast and 1/4 tsp coconut sugar, and mix well to combine.
  • Let the mixture sit for a few minutes to foam up.
  • Slowly add the bread flour and mix well to form a sticky dough.
  • Add 1/4 tsp cinnamon to the dough and mix well to combine.
  • Knead the dough on a flat, floured surface until smooth, about 5 minutes. (Add more bread flour as necessary to prevent the dough from getting too sticky).
  • Add the raisins and knead again until they are well incorporated into the bread dough.
  • Place the dough in a bowl and cover it with a towel.
  • Let the dough rise for about two hours to double in size.
  • Preheat the oven to 425° F.
  • Boil the bagel for one minute on each side.
  • Place the boiled bagel on a lined or greased baking sheet.
  • In a small bowl, mix together 2 tsp of coconut sugar with 1/4 tsp cinnamon.
  • Sprinkle the cinnamon sugar mixture over the top of the bagel.
  • Pop the bagel in the oven to bake for about 22 – 25 minutes, or until golden brown on the outside.
  • Let the bagel cool for a few minutes, then cut it in half with a bread knife.
