Good morning friends! Today, we are making a savory breakfast recipe. Shocking, I know. While I do tend to gravitate towards sweet breakfasts most of the time, I occassionally do enjoy a good savory breakfast. This chickpea flour vegan omelette is the perfect option for those days when you want a breakfast packed with protein and veggies.
This vegan omelette is actually insanely simple to make. You will need chickpea flour and a few key seasonings. Then, you just stuff it with crumbled tofu, veggies, vegan cheese shreds, and more. Now, let’s go over some logistics for this recipe as well as the list of ingredients you will need to make your chickpea flour vegan omelette a smashing success.
How Do You Substitute Egg For Chickpea Flour?
A very common question is how to substitute egg for chickpea flour. Essentially, when you combine chickpea flour with water, you get a liquid that can be poured into a pan and cooked to resemble an omelette. Key seasonings like turmeric, salt, and pepper give the base additional flavor.
If you really want the flavor to be more reminiscent of a traditional omelette, you can add black salt. I personally don’t have that ingredient on hand, and I’m sure many of you don’t either, so I left it out of this recipe. Regardless, this chickpea omelette still turns out delicious.

A vegan omelette is one that is made without the use of eggs. Since vegans do not consume meat or dairy products, those ingredients are not used to make a vegan omelette. My vegan omelette recipe is made with chickpea flour and loaded with protein.
What Can I Put In An Omelette?
You can put just about anything that you would like in an omelette. I personally love to add veggies to mine including spinach, chopped mushrooms, chopped tomatoes, and chopped onions. Many people also enjoy peppers in their omelettes. I also put some vegan cheddar cheese shreds in mine, which I highly recommend because it adds a ton of flavor to your vegan omelette.

Chickpea Flour Vegan Omelette – Ingredients
- Chickpea Flour – This ingredient comes as no surprise. I used Bob’s Red Mill brand chickpea flour (which was sent to me for free #gifted) to make my vegan and gluten free omelette.
- Nutritional Yeast Seasoning – The nutritional yeast seasoning is key to amp up that cheesy flavor. It also adds some vitamin B12 to the recipe.
- Turmeric – The turmeric adds extra color to the omelette.
- Salt – The salt adds flavor to the omelette and it can be adjusted to your own personal taste.
- Black Pepper – The black pepper is another ingredient you will want to add to taste.
- Water – The water combines with the chickpea flour to form the omelette base.
- Tofu – The tofu will be crumbled and added to the veggie mixture as part of the omelette filling. It adds protein to this savory breakfast.
- Spinach – The spinach is a key part of the omelette filling. It is very common in traditional omelettes, and this vegan version includes spinach as well.
- Mushrooms – The mushrooms are another common veggie used in omelettes. The mushrooms go really well with all of the other veggies in this vegan chickpea flour omelette recipe.
- Tomatoes – The chopped tomatoes are another key ingredient that will be added to your omelette as part of the filling.
- Yellow Onion – The chopped yellow onion is the final key veggie that goes into your omelette.
- Cheddar Cheese Shreds – The vegan cheddar cheese shreds add a ton of flavor and texture to this chickpea flour omelette. You definitely don’t want to omit them. I used the Daiya brand ones, which I really like because they melt into the omelette.
- Extra Virgin Olive Oil – The olive oil is necessary to grease your pan and prevent any sticking when cooking your veggies and your omelette.

Chickpea Flour Vegan Omelette Recipe
Ingredients
Omelette Base
- 1/4 cup chickpea flour (I used Bob's Red Mill brand which was sent to me)
- 1/2 tbsp nutritional yeast seasoning
- 1/8 tsp turmeric
- salt to taste
- black pepper to taste
- 1/4 cup water
- 1 tsp extra virgin olive oil
Omelette Filling
- 1/2 cup tightly packed spinach
- 1/5 package extra firm tofu (just under 3 ounces)
- 3 tbsp chopped mushrooms
- 3 tbsp chopped tomato
- 2 tbsp chopped yellow onion
- 1 – 2 tbsp vegan cheddar cheese shreds (I used Daiya)
- 1 tsp extra virgin olive oil
Instructions
- Add the chickpea flour, nutritional yeast seasoning, turmeric, salt, and pepper to a bowl and mix to combine.
- Add in the water and whisk all ingredients together thoroughly, then set aside.
- Add a bit of olive oil to a pan over low to medium heat.
- Add in the spinach, chopped mushrooms, chopped onion, and chopped tomatoes.
- Sauté the veggies for a few minutes until they have cooked down a bit.
- Press as much liquid as possible out of the tofu with a towel or tofu press.
- Crumble the tofu into the pan with the veggies and cook for a few more minutes.
- Remove the veggie tofu mixture from the pan.
- Re-oil the pan with more olive oil, then pour in the chickpea omelette mixture.
- Tilt the pan in a circular motion to spread the chickpea omelette mixture out to your desired size and thickness.
- Let the omelette cook for about four to five minutes over medium heat until it begins to solidify and comes up easily from the pan with a spatula.
- Flip the omelette and add in the veggie mixture along with the vegan cheese shreds.
- Fold the chickpea omelette in half to enclose the filling.
- Remove the omelette from heat and add optional fresh chives for garnish.
- Serve the omelette up with mashed avocado, fresh salsa, more vegan cheese shreds, or whatever else you'd like!
