Good morning friends! Today I am sharing a delicious baked oatmeal recipe that combines two amazing foods – strawberries and chocolate. Chocolate covered strawberries have always been one of my favorite desserts, so naturally I had to make an oatmeal version to enjoy for breakfast.

This chocolate strawberry baked oats recipe is fluffy and cake-like on the outside, slightly gooey from the strawberries on the inside, and packed with incredible flavor. Plus, it requires less than ten simple ingredients to whip up.

The process of making the oatmeal mixture is insanely simple, and then you just have to bake your oats until the desired consistency is achieved. Now, let’s go through some quick things to note for this recipe as well as the list of ingredients you will need to make this recipe a smashing success.


Can You Bake the Oatmeal With Frozen Strawberries?

Yes, you absolutely can make the baked oatmeal with frozen strawberries that you have heated in the microwave. However, they tend to have a mushier consistency than fresh strawberries. Therefore, you will likely end up with a more gooey oatmeal than you would have had you used fresh strawberries.

This is why I personally recommend using fresh (or freeze dried) strawberries if possible for this recipe. Using fresh strawberries decreases the chances of your oatmeal turning out overly gooey. But if you prefer a less cake-like texture for your baked oatmeal, then you might prefer to use frozen strawberries that you have heated in the microwave.


Are these Baked Chocolate Oats Vegan?

Of course! All the recipes on my blog are completely vegan. I have been vegan for over five years, and since I do eat (and taste test) every single recipe I make, you will find that all of the recipes I share on my blog are vegan.

It’s actually quite easy to make vegan baked oats since most of the base ingredients are naturally vegan. By subbing traditional milk for a non-dairy alternative, such as nut milk, oat milk, or even water, you can turn any non-vegan oatmeal recipe into a completely vegan one. Just make sure to use vegan chocolate chips as well 🙂

You can make most oat recipes gluten free as well by using gluten free oats. Many different brands make oats that are gluten free. You can always check your local grocery store to see if they sell them.


Chocolate Covered Strawberry Baked Oatmeal – Ingredients

  • Quick Oats – The first ingredient you will need for this recipe is the oats. We will be blending the oats up with other key base ingredients to form an oatmeal batter. If you want to make this recipe gluten free, use your favorite gluten free oats.
  • Strawberries – As described above, you can use either fresh, freeze dried, or frozen strawberries in this baked oats recipe. I definitely prefer and recommend using fresh or freeze strawberries for a more cake-like baked oatmeal. If you do use frozen strawberries, you definitely want to heat them in the microwave before adding them to your batter.
  • Cocoa Powder – The cocoa powder adds a nice chocolate decadence to the oatmeal base. I used Hershey’s special dark cocoa powder, but you can use any cocoa powder you prefer or have on hand.
  • Baking Powder – The baking powder acts as the key leavening agent for this recipe to ensure that your chocolate strawberry baked oatmeal comes out nice and fluffy.
  • Semi-Sweet Chocolate Chips – The semi-sweet chocolate chips add more chocolate flavor and sweetness to this recipe. You can use whichever ones you want, but I used miniature chocolate chips. If you are looking for some good vegan ones, I really like the Enjoy Life brand chocolate chips.
  • Water – The water acts as the key source of liquid for this recipe to ensure you end up with a nice and smooth oatmeal batter mixture.
  • Pure Maple Syrup – The pure maple syrup acts as an additional source of sweetness for the oatmeal base. You can drizzle even more syrup on top of your oatmeal once it finishes baking for extra sweet baked oats.

Ingredients
  

  • 1/2 cup quick oats
  • 1 tbsp fresh chopped strawberries (plus more for topping)
  • 1 tsp cocoa powder (I used Hershey's special dark)
  • 1/4 tsp baking powder
  • 1/2 tbsp semi-sweet chocolate chips (I used mini chips)
  • 4 1/2 tbsp water
  • 1/2 tbsp pure maple syrup (plus more for topping)

Instructions
 

  • Preheat the oven to 350° F.
  • Add the oats, cocoa powder, baking powder, water, and pure maple syrup to a high speed blender or food processor.
  • Blend until a smooth oatmeal batter consistency is achieved.
  • Gently fold the chopped strawberries and chocolate chips into the oatmeal batter.
  • Pour the oatmeal mixture into an oven safe ramekin.
  • Top the mixture with more chopped strawberry pieces and chocolate chips.
