Baked Pumpkin Chocolate Chip Donuts
Good morning friends! It has been a bit since I last posted a baked donut recipe on my blog, so I figured it was time to make a festive fall themed flavor. Today, I am sharing my recipe for vegan baked pumpkin chocolate chip donuts that are sweet, fluffy, and delicious. They are very reminiscent of a traditional cake donut. They are baked in the oven and completely vegan (of course).
While this recipe is technically fall themed, I think it is also perfect for the winter season. After all, who doesn’t love a fresh, warm, baked donut on a chilly winter day? I love the combination of pumpkin and chocolate flavors, and these donuts are certainly no exception. Best of all, they are insanely easy to make as they don’t require any complicated ingredients.
In order to make the donuts super fluffy, we will be using a combination of key leavening agents as well as a silicone donut pan with deep cavities. If you have a metal donut pan, that will work as well. However, I find that a silicone donut pan allows the baked donuts to slide out much more easily without any crumbling, and the deeper cavities make them extra fluffy.
Other than the silicone donut pan, these donuts don’t require any special equipment. Most of the ingredients are items you probably already have in your refrigerator or pantry. Now, let’s go ahead and dive into the list of ingredients you will need to make this baked pumpkin donut recipe a smashing success.
Baked Pumpkin Chocolate Chip Donuts – Ingredients
- Whole Wheat Pastry Flour – Whole wheat pastry flour is an essential base ingredient that is needed for this pumpkin chocolate chip donut recipe. I used Bob’s Red Mill brand whole wheat pastry flour.
- Oat Flour – The oat flour is another essential dry base ingredient for this recipe. I simply made my own by blending up old fashioned rolled oats for a few seconds. The oat flour combines perfectly with the whole wheat pastry flour to create the dry base for these donuts.
- Coconut Sugar – The coconut sugar is used to add sweetness to the donut batter.
- Chocolate Chips – The chocolate chips are absolutely essential for this recipe. They add the perfect chocolate decadence to each and every donut bite. I used Enjoy Life vegan mini semi-sweet chocolate chips. Additional chocolate chips are also used to make the chocolate donut glaze.
- Baking Powder – The baking powder is the first key leavening agent which helps the donuts rise.
- Baking Soda – The baking soda is the second key leavening agent which ensures that the pumpkin chocolate chip donuts come out super fluffy.
- Cinnamon – The cinnamon is an essential spice that really elevates the pumpkin spice flavor present in this baked pumpkin chocolate chip donut recipe.
- Pumpkin Pie Spice – The pumpkin pie spice is another crucial ingredient that helps create the delicious pumpkin spice flavor present in these baked donuts. It is an ingredient that you definitely will not want to omit.
- Nut Milk – The nut milk is used as the source of liquid for this recipe. It helps create the perfect pumpkin chocolate chip donut batter. I used unsweetened vanilla almond milk for that little hint of vanilla flavor, but you can use any nut milk you prefer or have on hand.
- Canned Pumpkin – The canned pumpkin adds color, flavor, and moisture to this recipe. It is the secret ingredient that helps ensure the donuts come out super fluffy and moist.
- Pure Maple Syrup – The pure maple syrup adds even more sweetness and moisture to these donuts.
- Almond Butter – The almond butter adds a ton of flavor and moisture to this recipe. I used a creamy natural almond butter that easily mixes into the donut batter.
- Melted Coconut Oil – This ingredient will be combined with some of the chocolate chips to form the perfect chocolate donut glaze.

Easy Baked Pumpkin Chocolate Chip Donuts
Ingredients
Pumpkin Chocolate Chip Donuts
- 1/2 cup oat flour
- 1/2 cup whole wheat pastry flour
- 2 tbsp coconut sugar
- 2 tbsp chocolate chips
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp pumpkin pie spice
- 1/2 cup + 1 tbsp nut milk (I used unsweetened vanilla almond milk)
- 1/4 cup canned pumpkin
- 2 tbsp pure maple syrup
- 2 tbsp creamy almond butter (I used Kirkland's)
Chocolate Donut Glaze
- 2 tbsp dark chocolate chips
- 1 tsp melted coconut oil (measure after melting)
Instructions
- Preheat the oven to 350° F.
- Combine the oat flour, pastry flour, coconut sugar, baking powder, baking soda, cinnamon, and pumpkin pie spice in a large mixing bowl.
- Make a well in the center of the bowl and add the nut milk, canned pumpkin, pure maple syrup, and almond butter.
- Mix the wet ingredients well to combine.
- Slowly mix the wet ingredients into the dry until a smooth batter forms.
- Gently fold in the 2 tbsp of chocolate chips.
- Evenly distribute the batter between six cavities of a silicone donut pan.
- Pop the donuts in the oven to bake for about 30 minutes, or until a toothpick inserted comes out clean.
- Let the donuts cool completely before removing them from the donut pan.
- Microwave the 2 tbsp of chocolate chips with the melted coconut oil for about 40 seconds, or until a drizzly consistency is achieved.
- Dip the top of each donut in the melted chocolate glaze.
- Dig in and enjoy! (You could also refrigerate the donuts to allow the chocolate glaze to harden before eating them).

They are ultra fluffy and very reminiscent of traditional cake donuts. However, they have the added bonus of being completely vegan :).
