I really like the taste of it, and it serves as a great base for recipes such as this one. Now, let’s go ahead and dive into a few quick things to note for this recipe. How To Bake Spaghetti Squash in the Oven/Microwave

The steps that I use to bake a spaghetti squash in the oven/microwave are quite simple. For this recipe, we will soften up the spaghetti squash in the microwave for a few minutes before baking it. That way, it will be easier to cut in half with a knife. After that, we will bake the squash in the oven so that it turns out nice and soft inside. In general, to bake a spaghetti squash, I use the following simple steps:

  • Extra Firm Tofu – This ingredient adds a source of plant based protein to the recipe. You will want to fry it up so that it gets nice and crispy.
  • Garbanzo Beans – The garbanzo beans add a ton of flavor to this recipe, as well as a good source of carbs and protein. They are the third essential ingredient you will need for this recipe.
  • Fresh Spinach – The fresh spinach will be sautéed in a pan, along with some fresh minced garlic.

Ingredients
  

  • 1 medium spaghetti squash
  • 1/2 cup garbanzo beans (drained and rinsed)
  • 1/2 package extra firm tofu (1/2 package = about 190 grams)
  • 1 large handful fresh spinach
  • 1 clove freshly minced garlic
  • nutritional yeast seasoning (to taste)
  • salt (to taste)
  • pepper (to taste)
  • 1/2 cup marinara sauce of choice
  • 1/2 tbsp extra virgin olive oil

Instructions
 

  • Preheat the oven to 400° F.
  • Make five or six deep cuts in the spaghetti squash.
  • Microwave the spaghetti squash until it is soft enough to cut through with a knife, about four minutes.
  • Cut the spaghetti squash in half lengthwise.
  • Place both halves of the spaghetti squash face up on a baking sheet.
  • Bake the spaghetti squash until it is soft inside, about 35 – 40 minutes.
  • Sauté the spinach and garlic for a few minutes over low-medium heat in a bit of oil.
  • Cut the tofu into small cubes.
  • Fry the tofu pieces in a bit of oil over low-medium heat for a few minutes until golden brown and crispy.
  • Remove the spaghetti squash boats from the oven and let them cool for a bit.
