Good morning everyone! Now that November is finally here, I am going to start to roll out some easy vegan Thanksgiving recipes for all of you. I know that many of us have friends and family members who are either vegan, vegetarian, or dairy-free nowadays. So, it’s nice to be able to create a couple of dishes that everyone can enjoy at holiday parties and gatherings.

Today, I am sharing my easy and delicious vegan cornbread muffins recipe. These cornbread muffins are moist, sweet, fluffy, and delicious. The muffins are a Thanksgiving staple in my family. However, they also taste amazing served with my dad’s famous vegan chili. This cornbread muffin recipe is one that I definitely recommend you try out this holiday season.

What Is Vegan Cornbread Made Of?

Vegan cornbread is made of many of the same ingredients that you will find in traditional cornbread. My cornbread muffins specifically contain yellow cornmeal, a mix of flours (oat flour and bread flour), as well as some leavening agents (baking soda and baking powder). In order to ensure these muffins come out nice and moist, we use applesauce, olive oil, maple syrup, and non dairy milk. Finally, there are a few key sources of sweetness that I included in the muffin batter including the maple syrup and applesauce mentioned above, as well as a bit of coconut sugar.   • Bread Flour – The bread flour adds to the dry base to achieve the perfect muffin texture that is light and fluffy on the inside.
  • Canned Corn – The canned corn adds both flavor and texture to this delicious cornbread muffin recipe. You will want to drain the liquid from your corn before you fold it into your muffin batter. The corn adds texture, flavor, and sweetness to this delicious vegan cornbread muffin recipe.
  • Coconut Sugar – The coconut sugar adds a ton of sweetness to this vegan cornbread muffin recipe.
  • Baking Powder – The baking powder is an essential leavening agent which helps these muffins rise.

Ingredients
  

  • 1 cup yellow cornmeal
  • 1/2 cup quick oats (blended into a fine oat flour)
  • 1/4 cup bread flour
  • 1 cup canned corn
  • 2 tbsp coconut sugar
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup + 2 tbsp nut milk (I used unsweetened vanilla almond milk)
  • 1/4 cup pure maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 tbsp olive oil

Instructions
 

  • Preheat the oven to 350° F.
  • Add the cornmeal, oat flour, bread flour, coconut sugar, baking powder, and baking soda to a large bowl.
  • Mix thoroughly to combine.
  • Make a well in the center of the bowl, then add the nut milk, maple syrup, applesauce, and olive oil.
  • Mix the wet ingredients to combine, then slowly mix the wet into the dry to form a smooth muffin batter.
  • Gently fold in the corn.
  • Evenly distribute the batter between 10 cavities of a lined or greased muffin pan.
  • Bake the muffins for about 25 minutes, or until a toothpick inserted comes out clean.
  • Let the muffins cool completely before removing them from the pan.
