While I would typically make a quick smoothie bowl or vegan banana ice cream, I didn’t need to today. Why? Because I had some delicious frozen smoothie cereal bars sitting in my freezer just waiting to be devoured. This brings us to today’s recipe – peanut butter banana frozen smoothie cereal bars.
This recipe is loaded with flavor and nutrients. It features a crushed cereal base with a peanut butter banana flavored frozen smoothie layer on top. If you like the combination of peanut butter and banana, you are going to love this recipe.

- Creamy Peanut Butter – The creamy peanut butter adds a ton of flavor and richness to this frozen smoothie cereal bars recipe. It is not only added to the crushed cereal base, but it is also swirled on top of the smoothie bars. I used Trader Joe’s creamy salted peanut butter.
- Pure Maple Syrup – The pure maple syrup adds sweetness to the crushed cereal base. It also helps bind all of the base layer ingredients together.
- Nut Milk – This ingredient is used to add moisture to the crushed cereal base layer. It is also blended with the frozen banana to help the peanut butter banana smoothie layer achieve a thick and creamy texture. I used unsweetened vanilla almond milk, but you can use whichever nut milk you have on hand or enjoy most.
- Frozen Banana – The next ingredient you will need for this recipe is the frozen banana. This is pretty much a given, as it makes up the bulk of the frozen smoothie layer. Cereal Base Layer
- 2 cups cereal (I used Trader Joe's O's)
- 2 tbsp creamy peanut butter
- 2 tbsp pure maple syrup
- 2 tbsp nut milk (I used unsweetened vanilla almond milk)
Frozen Smoothie Layer
- 2 medium frozen bananas
- 1/4 cup powdered peanut butter (I used PBFit)
- 1 tbsp nut milk (I used unsweetened vanilla almond milk)
Peanut Butter Swirl Topping
- 1 tbsp creamy peanut butter
Instructions
- Add the cereal, maple syrup, 2 tablespoons of peanut butter, and 2 tablespoons of nut milk to a high speed food processor.
- Process until a thick, sticky dough forms.
- Form the cereal base layer by pressing the dough onto a parchment lined rectangular/square pan.
- Freeze the cereal base layer for 10 minutes.
- Make the frozen smoothie layer by blending the frozen bananas, powdered peanut butter, and 1 tablespoon of nut milk in a high speed food processor for a few minutes, or until a thick and creamy consistency is achieved.
- Spread the smoothie mixture out in an even layer on top of the cereal base layer.
- Add the other tablespoon of peanut butter on top of the smoothie layer and use a toothpick to make a swirl design.
- Freeze the mixture for about 20 – 30 minutes, or until firm.
- Cut the mixture into eight rectangular bars.
- Dig in and enjoy!
