Moist Blueberry Banana Bread

Hey everyone! Today I will be sharing with you a delicious and moist vegan blueberry banana bread. This time I threw in some blueberries for that extra yum factor. I hope you enjoy it.

As you probably have seen, I have a number of delicious banana bread recipes on the blog. That stems from my love of bananas. As a child, I didn’t eat much banana bread.

My mom just never made it, and we didn’t buy it pre-packaged anywhere, so I didn’t develop a love for it until I started cooking it myself. But, what I did love were banana muffins. They were moist, sugary, delicious, and had crunchy walnuts in every bite.

I didn’t eat them too often. But when I did, I savored every morsel of those moist and fluffy banana muffins. I can’t remember the last time I had one, but I definitely need to make a healthy vegan version of them sometime soon.

Beyond that, I used to love chopping up banana slices in my cereal. I was never one of those kids who hated bananas. I loved the taste, and the mushy texture never bothered me.

Nowadays, I use bananas all the time. I love them in many baked recipes, including waffles, brownies, and of course, banana bread. So, let’s take a look at some of the ingredients that make up this delicious banana bread goodness.


Moist Blueberry Banana Bread – Ingredients

  • Dates – Dates are not the prettiest looking dried fruit. They kind of remind me of prunes. However, they taste delicious. They are naturally very sweet, which is why they are often referred to as nature’s candy. We will use these to add some natural sweetness to the banana bread, and make it taste amazing.
  • Bananas – The best bananas for any kind of banana bread you want to make are overripe ones. You want them to be super sweet and easy to mash up. Overripe bananas are perfect for this.

    A tip for you is that if your bananas aren’t ready, try storing them in the dark, like in a drawer. I have found that this can help them ripen up more quickly. And if you are impatient like me, when you want to make banana bread, you want to make it right then and there.
  • Leavening Agents – Baking powder and soda will be used to really help this banana bread rise. You don’t want a blueberry banana bread that is completely caving in towards the middle. These two ingredients will help prevent that from happening. So, make sure that you don’t leave them out.
  • Applesauce – I used unsweetened original applesauce that comes in a big tub. You don’t need to use the sweetened kind, as that will just add unnecessary sugar. Applesauce is naturally sweet, and it gives the banana bread some additional moistness as well.
  • Almond Milk – I used unsweetened vanilla almond milk. I think the vanilla flavor gives baked recipes a little extra kick, so it is usually my go-to nut milk of choice in most of my fresh baked goods. This blueberry banana bread is no exception.
  • Pure Vanilla Extract – Vanilla extract is a magical little ingredient that helps amplify all the flavors that are already present in your baked goods. So, don’t neglect this step. At least, try not to. I know vanilla extract is very pricy, so my tip is to buy it in bulk if possible for a lower cost per ounce.
  • Blueberries – You can’t have blueberry banana bread without some fresh and delicious blueberries. These also add moistness to the bread, along with a lot of color, nutrients, and antioxidants. So, they are the perfect fruit to boost the nutrient content even more.
  • Wheat Flour – I used Bob’s Red Mill wheat flour. It is one of my favorites for baked goods. I try to use wheat flour when I can to make my desserts as healthy as possible. With all the other awesome ingredients in this bread, you won’t be sacrificing flavor either.
  • Cinnamon + Salt – These are the simple spices that add even more flavor.

Ingredients
  

  • 1/3 cup dates (about 2 1/2 dates, finely chopped)
  • 4 overripe bananas
  • 1/2 tsp baking powder
  • 2 tsp baking soda
  • 1/3 cup applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • 1/2 cup blueberries
  • 1 3/4 cup whole wheat flour
  • 1/2 tsp cinnamon
  • 1 dash salt

Instructions
 

  • Preheat oven to 350° F.
  • Mix all dry ingredients together (do not add the blueberries or dates yet)
  • Peel and mash bananas
  • Add all wet ingredients, including the mashed banana, into the dry mixture and combine thoroughly.
  • Fold in the chopped dates and blueberries
  • Bake for 50 minutes, or until a toothpick inserted comes out clean.
  • Let cool and enjoy!
