Easy Vegan Oatmeal Cookies

Good afternoon and happy holidays everyone! Today, I bring you delicious oatmeal cookies. These cookies can be customized in so many different ways. They are healthy, delicious, vegan, and can even be made gluten free!

My love for oatmeal cookies started early on. When I was younger, I was the weird kid who always chose oatmeal raisin cookies over chocolate chip. Why? Because I didn’t really like chocolate. Now, I am just the opposite. I love dark chocolate. But, I still love my oatmeal raisin cookies as well.

Back then, my friends would tease me for choosing oatmeal raisin, saying that it was the cookie that nobody liked. But to me, it was the perfect cookie. It was soft, chewy, had the perfect amount of sweetness, and tasted amazing when I dunked it in milk.

But, I knew I needed to create a cookie for everyone. This cookie can be easily customized in four different ways. Not a fan of oatmeal raisin cookies? No problem, you can make the peanut butter version. Allergic to peanut butter? Try the chocolate chip ones instead.

You literally can’t lose with this awesome recipe, as there are endless combinations. And each one tastes incredible. However, if you hate oatmeal cookies, then I can’t help you, because these are indeed oatmeal cookies. But, maybe that’s not true. Maybe you used to hate oatmeal cookies, but these are the ones that will change your mind.

Honestly though, who doesn’t like oatmeal cookies? I can’t name one person. I have made these for family members, friends, and teammates, and they have all loved them.

I actually made these just the other week, and my family gobbled them down so fast that my dad was begging me to make more. So, let’s look at the ingredients we need to make the best oatmeal cookie you’ll ever try.


Easy Vegan Oatmeal Cookies – Ingredients

  • Rolled Oats – Of course, you can’t have oatmeal cookies without the oats. I used old fashioned rolled oats, which I made into an oat flour in my NutriBullet blender.
  • Melted Coconut Oil – Yes, I am specifying melted here. Some of us do live in climates that get cold in the winter, so our coconut oil solidifies. If yours looks solid, don’t panic. Just scoop some into a microwave safe dish, pop it in for about 10 second intervals until it is completely melted, and then measure it out.

    You will be all good to go if you do that. The coconut oil helps these cookies stay together and makes them taste nice and rich.
  • Truvia Baking Blend – The Truvia baking blend is a mix of Truvia and sugar. It keeps the total sugar down a bit while still providing the sweetness these cookies need. You can find it at the grocery store or use my Amazon link below to order it online.
  • Unsweetened Vanilla Almond Milk – As per usual, I used unsweetened vanilla. No need to add more sugar to this recipe with sweetened milk. The unsweetened version works just perfectly.

Healthy Vegan Oatmeal Cookies – Add-ins

This is where everything gets exciting. There are a ton of add-ins you can choose from. First up is my childhood favorite – raisins. If you want oatmeal raisin cookies, use this add-in. Raisins are simply dried fruit, so they are naturally sweet.

If you want chocolate chip oatmeal cookies, add some chocolate chips. I love the Enjoy Life mini vegan chocolate chips, and those are the ones you see in the pictures.

If you want peanut butter oatmeal cookies, use a natural creamy peanut butter. I recommend the Wild Friends brand. It is natural, tastes amazing, and is ultra creamy. That is exactly what we want in a peanut butter.

Finally, if you really want to get crazy, go for a mix of peanut butter and chocolate chips. This is the combination for the chocolate peanut butter lover. My favorite candy growing up was Reese’s cups, so I am a true fan of the chocolate peanut butter flavor combination. But, then again, who isn’t?

Ingredients
  

  • 1 1/2 cups rolled oats
  • 2 tbsp melted coconut oil
  • 3 tbsp truvia baking blend
  • 3-4 tbsp almond milk

Instructions
 

  • Preheat oven to 350° F.
  • Blend the oats in a food processor or blender until an oat flour forms.
  • Combine all ingredients, adding the almond milk gradually to form a cookie dough consistency.
  • Line a cookie sheet with parchment paper and spray with oil.
  • Choose the type of cookie you want: oatmeal raisin, peanut butter, chocolate chip, peanut butter chocolate chip, or whatever other combo you’d like.
  • For classic oatmeal chocolate chip cookies, form dough balls and roll in a few chocolate chips to each.
    For oatmeal raisin cookies, sprinkle some cinnamon into the batter, and roll in a few raisins to each dough ball.
    For peanut butter cookies, add some melted peanut butter to the dough before forming balls. This one is my personal favorite!
    For peanut butter chocolate chip cookies, follow the above step and roll in some chocolate chips.
  • Flatten the cookies and place them onto the parchment paper.
  • Pop the cookies into the oven and bake for 8-10 minutes or until the cookies are firm.
  • Enjoy!
