Hello everyone! Today I am recreating a recipe I made awhile ago using dates. Only this time, I added peanut butter to the mixture for the perfect chocolate peanut butter flavor combination. I really think that the peanut butter takes these energy bites to a whole new level in terms of flavor. This recipe is super easy to whip up and the bites are an awesome snack to pack up and take with you on the go. If you’d like, you can even omit the powdered sugar coating so that they are a bit less messy.

These little date bites also have the perfect chewy texture and a ton of sweetness in every bite thanks to the dates, coconut sugar, and powdered sugar coating. Dates are often referred to as “nature’s candy” because of just how sweet they truly are. I think they have a flavor and texture that is very reminiscent of caramel. But enough on that. Let’s go through a few quick things to note for this recipe. Then, we will dive into the simple list of ingredients you will need to make these chocolate peanut butter date bites.


Chocolate Peanut Butter Date Bites – The Dates

I wanted to quickly talk a little bit about Medjool dates, as dates create the bulk of the base for this recipe. Dates are essentially a dried fruit with an incredibly sweet flavor. I like to use dates in a wide variety of ways. First off, I use them to make crusts for vegan pies such as chocolate silk pie and pumpkin pie. I also enjoy dipping dates in peanut butter for a quick and easy snack. I also like to chop them up and add them on top of my peanut butter toast for some sweetness. Finally, I like to fill my dates with some peanut butter and a little melted dark chocolate and refrigerate them for a delicious sweet treat. The point is, dates are a super versatile and delicious vegan food that can be used in many different recipes. My personal favorite variety are the pitted Medjool dates, which is the kind I recommend for this recipe.

Now that we have talked a bit about dates in general, let’s take a closer look at all of the ingredients you will need to make these delicious chocolate peanut butter date bites.


Chocolate Peanut Butter Date Bites – Ingredients

  • Pitted Medjool Dates – The first ingredient you will need for this recipe are the pitted Medjool dates. You should be able to get these at your local grocery store. I have found them at both Kroger and Trader Joe’s. I have also seen them at a few other grocery stores, but Kroger and Trader Joe’s seem to have the best price on them.
  • Creamy Peanut Butter – The next ingredient you will want for this recipe is the peanut butter. I find that a creamy, natural peanut butter works best for this recipe. It is a lot more drizzly, so it easily combines with the other ingredients to form a sticky, moldable dough. I used the Kroger brand creamy natural peanut butter, but you can use whichever kind you prefer or have on hand.
  • Coconut Sugar – The coconut sugar adds even more sweetness to these little date bites.
  • Cocoa Powder – The cocoa powder is another key ingredient which adds the chocolate element to these date bites. While cocoa powder itself is bitter, you don’t taste the bitterness in these deliciously sweet chocolate peanut butter date bites.
  • Powdered Sugar – The powdered sugar is the coating that we will use to add even more sweetness to these date bites. It is the perfect finishing touch for this recipe. If you want to take these bites on the go, you can easily omit the powdered sugar coating to make the date bites less messy.

Ingredients
  

  • 1/2 cup pitted Medjool dates
  • 2 tbsp creamy peanut butter
  • 1 tbsp coconut sugar
  • 1/2 tbsp cocoa powder
  • 1 tbsp powdered sugar

Instructions
 

  • Soak the dates in warm water for 10 minutes to soften.
  • Add the dates, peanut butter, coconut sugar, and cocoa powder to a high speed food processor.
  • Process the date mixture for a minute or two until a thick and sticky dough forms.
  • Roll the dough into six balls of equal size.
  • Roll each date bite in powdered sugar.
