Good morning everyone! Today I am bringing you a savory breakfast recipe – tofu scramble with veggies. This recipe is packed with protein, nutrients, and tons of flavor. Normally, I am all about the sweeter breakfast foods. However, when I’m craving something savory, my go-to a lot of the time is this veggie tofu scramble. It’s actually quite simple to make, which is awesome.
I like to get my workdays started early, so this scramble is perfect for those times when I don’t want to cook up something intricate or time consuming, but I still want something savory. I save the fancier breakfast foods for the weekends when I have a lot more time :).
Some of my favorite weekday breakfast staples include microwave oatmeal or peanut butter banana toast, but when I don’t want something sweet, a tofu scramble is the perfect option. Now, let’s go over the logistics and list of ingredients you will need for this tofu scramble.
How Can I Make Tofu Taste Good?
A super common question people often ask is regarding how to make tofu taste good. It’s a valid question, since not everyone likes tofu without seasonings. I find that I can make tofu taste incredible with just a few simple seasonings, such as the ones that we will be using in this recipe. Now, let’s take a look at the list of ingredients.
Easy Vegan Tofu Scramble With Veggies – Ingredients
- Tofu – This ingredient is the first essential for a tofu scramble. Make sure that you use a towel or tofu press to squeeze out as much liquid as possible before crumbling it up and adding it to your pan. Also, make sure you use firm or extra firm tofu for this recipe, not silken tofu.
- Spinach – The spinach cooks down a lot, so don’t be shy. You will add a good amount into your tofu scramble for those micronutrients. I love to sneak spinach into my meals whenever I can, and this tofu scramble is the perfect recipe to add a good amount of spinach into. I put a lot into my scrambles because it wilts does quite a bit as it cookes.
- Tomatoes – You will want some chopped roma tomatoes for this tofu scramble as well. For some reason, I think tomatoes taste especially amazing sauteéd up in a pan. I love the way they soften up, and they make a great addition to this high protein tofu scramble recipe.
- Mushrooms – The mushrooms are another key vegetable you will want for this tofu scramble recipe. They compliment the dish quite nicely.
- Yellow Onion – The yellow onion adds flavor and nutrients to this recipe, and it is the final vegetable you will want to add into this dish.
- Nutritional Yeast Seasoning – This gives the dish that slight nutty/cheesy flavor. It is not a strong one, but it’s definitely there. It also provides some vitamin B12. I personally eat nutritional yeast seasoning almost daily. I love adding it to many of my savory meals.
- Cumin – The cumin is a key spice used to add flavor to this recipe.
- Garlic Powder – The garlic powder is another amazing spice used in this recipe.
- Turmeric – The turmeric gives the scramble a beautiful and vibrant yellow color.
- Salt + Pepper – I love adding black pepper to savory dishes. It gives the scramble a nice little kick. The salt is super customizable to your own taste. I prefer my dishes less salty, so I just add a tiny bit.
- Vegan Cheddar Style Shreds – This is an optional topping that I highly recommend. It adds texture and flavor to the scramble.

Easy Vegan Tofu Scramble With Veggies
Ingredients
- 1 package extra firm tofu (14 oz. drained weight)
- 2 1/2 – 3 cups tightly packed spinach
- 1 cup chopped roma tomatoes
- 1 cup chopped white mushrooms
- 1/2 cup chopped yellow onion
- 2 tbsp nutritional yeast seasoning
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp turmeric
- salt to taste
- black pepper to taste
- vegan cheddar style shreds (optional, for topping)
Instructions
- Grease a pan with a little bit of olive oil and place it on the stovetop over medium heat.
- Drain your block of tofu and squeeze out as much excess liquid as possible using a towel or tofu press.
- Crumble up the tofu and add it to the pan.
- Add in the spinach, chopped tomatoes, chopped mushrooms, and chopped onion.
- Cook down the mixture until the veggies are soft and the spinach is wilted, about 6 to 8 minutes. Stir consistently. You can add additional oil for slightly crispier tofu.
- Add in the nutritonal yeast seasoning, cumin, garlic powder, turmeric, and salt + pepper to taste and stir to combine.
- Remove your tofu scramble from heat, plate it, and top it with optional vegan cheddar style shreds (highly recommend for additional flavor!).
- Dig in and enjoy!
Notes
Note: I recommend using as many of the spices listed as possible (especially the nutritional yeast seasoning), as they really give this dish a lot of flavor.
