Ingredients
  

  • 1/2 cup tightly packed spinach (can sub any other leafy greens)
  • 1/2 cup cooked, cubed, and chilled sweet potato (with skin removed, if desired)
  • 1/2 cup cooked, cubed, and chilled tofu
  • 2 tbsp corn
  • 1 tbsp fresh salsa (can sub chopped tomatoes)
  • 1 tbsp pepitas (I used lightly salted)
  • 1 tsp nutritional yeast seasoning (optional, for topping)
  • 2 tbsp dressing of choice (I used vegan tahini dressing)

Instructions
 

  • Add the spinach to a bowl, followed by the sweet potato, tofu, corn, and salsa.
  • Sprinkle on the pepitas and nutritional yeast seasoning.
  • Drizzle on your dressing of choice.
