- 1/2 cup tightly packed spinach (can sub any other leafy greens)
- 1/2 cup cooked, cubed, and chilled sweet potato (with skin removed, if desired)
- 1/2 cup cooked, cubed, and chilled tofu
- 2 tbsp corn
- 1 tbsp fresh salsa (can sub chopped tomatoes)
- 1 tbsp pepitas (I used lightly salted)
- 1 tsp nutritional yeast seasoning (optional, for topping)
- 2 tbsp dressing of choice (I used vegan tahini dressing)
Add the spinach to a bowl, followed by the sweet potato, tofu, corn, and salsa.
Sprinkle on the pepitas and nutritional yeast seasoning.
Drizzle on your dressing of choice.
Dig in and enjoy your salad!
