quick oats
(blended into a fine oat flour)

vanilla protein powder
(I used Orgain Simple creamy vanilla protein powder)

rainbow sprinkles
(I used Simple Truth Organic)
1/4

baking powder
1/4 cup
+ 2 tbsp
nut milk
(I used unsweetened vanilla almond milk)

tbsp
unsweetened applesauce
1
tbsp
creamy peanut butter
(for topping)
pure maple syrup
(to taste)
vegan whipped cream
(optional, to taste)
Instructions
Combine the oat flour, protein powder, and baking powder in a large mixing bowl.
Add the applesauce and nut milk, and mix again.
Gently fold in the rainbow sprinkles.
Pour dollops of batter onto a greased pan or pancake griddle.
Cook the pancakes for a few minutes on each side until golden brown.
Plate your pancakes.
Add the peanut butter, pure maple syrup, vegan whipped cream, and more rainbow sprinkles.
Dig in and enjoy!
