Vegan Oatmeal Cookies 4 Ways

Chewy and moist oatmeal cookies with chocolatey goodness hidden inside.

Ingredients
  

  • 1 1/2 cups rolled oats
  • 2 tbsp melted coconut oil
  • 3 tbsp truvia baking blend
  • 3-4 tbsp almond milk

Instructions
 

  • Preheat oven to 350° F.
  • Blend the oats in a food processor or blender until an oat flour forms.
  • Combine all ingredients, adding the almond milk gradually to form a cookie dough consistency.
  • Line a cookie sheet with parchment paper and spray with oil.
  • Choose the type of cookie you want: oatmeal raisin, peanut butter, chocolate chip, peanut butter chocolate chip, or whatever other combo you'd like.
  • For classic oatmeal chocolate chip cookies, form dough balls and roll in a few chocolate chips to each.
    For oatmeal raisin cookies, sprinkle some cinnamon into the batter, and roll in a few raisins to each dough ball.
    For peanut butter cookies, add some melted peanut butter to the dough before forming balls. This one is my personal favorite!
    For peanut butter chocolate chip cookies, follow the above step and roll in some chocolate chips.
  • Flatten the cookies and place them onto the parchment paper.
  • Pop the cookies into the oven and bake for 8-10 minutes or until the cookies are firm.
  • Enjoy!
