Ingredients

  • 1/2 cup quick oats (blended into a fine oat flour)
  • 1/4 cup whole wheat flour
  • 3 tbsp chocolate protein powder (I used Orgain Simple in the chocolate peanut butter cup flavor)
  • 2 tbsp mini semi-sweet chocolate chips
  • 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 cup nut milk (I used unsweetened vanilla almond milk)
  • 3 tbsp pure maple syrup
  • 2 tbsp unsweetened applesauce
  • 2 tbsp creamy peanut butter

Instructions

  • Preheat the oven to 350° F.
  • Mix the oat flour, whole wheat flour, chocolate protein powder, baking powder, and baking soda together in a large mixing bowl.
  • Make a well in the center of the bowl, then add in the nut milk, applesauce, pure maple syrup, and peanut butter.
  • Mix all wet ingredients to combine, then slowly mix the wet into the dry.
  • Gently fold in the chocolate chips, reserving a few for topping your muffins with if desired.
  • Spoon your batter evenly between six cavities of a lined or greased muffin pan, filling each cavity about 2/3 full.
  • Bake the muffins for about 25 minutes, or until a toothpick inserted comes out clean.
