Peach Oatmeal Breakfast Bars

Ingredients
  

  • 1 cup rolled oats (blended into a fine oat flour)
  • 1 fresh peach
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup + 1 tbsp nut milk
  • 2 tbsp creamy peanut butter
  • 2 tbsp pure maple syrup

Instructions
 

  • In a large mixing bowl, combine the oat flour, cinnamon, baking powder, and baking soda.
  • Blend the nut milk with 1/4 of the fresh peach and a few dashes of cinnamon until smooth.
  • Make a well in the center of the mixing bowl, then add the peach milk, peanut butter, and pure maple syrup.
  • Mix the liquid ingredients well to combine.
  • Slowly mix the wet ingredients into the dry to form a smooth oatmeal batter.
  • Chop up the remaining 3/4 peach.
  • Gently fold in the peach pieces, reserving about 1/4 peach to top the peach oatmeal bars with.
  • Top the oatmeal bars with the remaining 1/4 peach.
  • Bake the peach oatmeal bars for about 30 minutes, or until a toothpick inserted comes out clean.
  • Let the peach bars cool completely before cutting them into six rectangular bars.
