In a large mixing bowl, combine the oat flour, cinnamon, baking powder, and baking soda.
Blend the nut milk with 1/4 of the fresh peach and a few dashes of cinnamon until smooth.
Make a well in the center of the mixing bowl, then add the peach milk, peanut butter, and pure maple syrup.
Mix the liquid ingredients well to combine.
Slowly mix the wet ingredients into the dry to form a smooth oatmeal batter.
Chop up the remaining 3/4 peach.
Gently fold in the peach pieces, reserving about 1/4 peach to top the peach oatmeal bars with.
Top the oatmeal bars with the remaining 1/4 peach.
Bake the peach oatmeal bars for about 30 minutes, or until a toothpick inserted comes out clean.
Let the peach bars cool completely before cutting them into six rectangular bars.
Dig in and enjoy! I like to top my peach bars with peanut butter and coco whip.
