Ingredients
  

  • 1 1/2 cup rolled oats (blended into a fine oat flour)
  • 2 tbsp coconut sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 medium overripe banana (thoroughly mashed)
  • 1/2 cup nut milk (I used unsweetened vanilla almond milk)
  • 3 tbsp creamy peanut butter
  • 1 tbsp pure maple syrup
  • 1 - 2 tbsp chocolate chips (I used semi-sweet chocolate chips)

Instructions
 

  • Preheat the oven to 350° F.
  • In a large mixing bowl, combine the oat flour, coconut sugar, baking powder, and baking soda.
  • Make a well in the center of the bowl, then add the mashed banana, nut milk, peanut butter, and pure maple syrup.
  • Mix well to combine.
  • Pour dollops of batter into seven cavities of a lined or greased muffin pan.
  • Top the muffins off with the chocolate chips.
  • Pop the muffins in the oven to bake for about 25 minutes, or until a toothpick inserted comes out clean.
  • Let the muffins cool for a bit before removing them from the pan.
  • Dig in and enjoy!
