Microwave the water in a large bowl for 15 seconds to warm it up.
Add the instant yeast and 1/4 tsp coconut sugar, and mix well to combine.
Let the mixture sit for a few minutes to foam up.
Slowly add the bread flour and mix well to form a sticky dough.
Add 1/4 tsp cinnamon to the dough and mix well to combine.
Knead the dough on a flat, floured surface until smooth, about 5 minutes. (Add more bread flour as necessary to prevent the dough from getting too sticky).
Add the raisins and knead again until they are well incorporated into the bread dough.
Place the dough in a bowl and cover it with a towel.
Let the dough rise for about two hours to double in size.
Preheat the oven to 425° F.
Boil the bagel for one minute on each side.
Place the boiled bagel on a lined or greased baking sheet.
In a small bowl, mix together 2 tsp of coconut sugar with 1/4 tsp cinnamon.
Sprinkle the cinnamon sugar mixture over the top of the bagel.
Pop the bagel in the oven to bake for about 22 - 25 minutes, or until golden brown on the outside.
Let the bagel cool for a few minutes, then cut it in half with a bread knife.
Dig in and enjoy!
