- 1/2 cup quick oats
- 1/4 - 1/3 cup fresh chopped apple (I used honeycrisp)
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- 1/2 cup water
- 1 tbsp creamy peanut butter
- pure maple syrup (to taste)
Preheat the oven to 350° F.
Add the oats, baking powder, cinnamon, water, and optional bit of pure maple syrup (for extra sweetness) to a high speed blender or food processor.
Blend for a few minutes until a smooth oatmeal batter consistency is achieved.
Gently fold in the chopped apple.
Pour the mixture into an oven safe dish or ramekin.
Top the mixture with more apple pieces.
Bake for about 20 - 25 minutes, or until your desired consistency is achieved.
Drizzle on pure maple syrup to taste.
Add the creamy peanut butter.
Dig in and enjoy the oatmeal fresh and warm!
