Easy Vegan Fried Rice Without Soy Sauce

Easy vegan fried rice that comes together in minutes.

- 1/4 cup dry rice (I used jasmine brown rice)
- 3/4 cup water
- 1/4 cup frozen peas and carrots
- 2 tsp liquid aminos
Cook the rice in the water per the package directions until soft and fluffy (I used my rice cooker, but you could use a pot instead).
Set the rice aside to cool.
Heat the frozen vegetables in the microwave for a minute or so.
Add the rice, heated vegetables, and liquid aminos to a pan over low to medium heat.
Stir the mixture continuously for a few minutes until the liquid aminos is absorbed by the rice and veggies.
Serve the rice fresh and warm with whatever you'd like. I like to have tofu with mine.
