Good morning friends! Today’s post features one of my favorite foods – bananas. I love bananas because they are cheap, sweet, tasty, and super versatile. The recipe that I’m about to share will all of you is for an ultra moist loaf of vegan chocolate chip walnut banana bread. This bread is super delicious and it also makes your kitchen smell amazing.
When I started getting into baking, I was in college. Banana bread was one of the first recipes that I tackled. It is honestly one of the easiest baked goods to make because you simply mix all of the ingredients together, pour the mixture into a pan, and bake the banana bread loaf until it’s cooked all the way through.
Once I started to make banana bread at home from scratch, I stopped purchasing the premade kind at the store. Flash forward about five years, and I have now made a ton of different banana bread variations, including chocolate chip banana bread, blueberry banana bread, pumpkin banana bread, and many other flavor combinations.
Anyway, that’s enough on how I got started making vegan banana bread. Now, let’s take a look at some quick things to note for this recipe. Then, we will go through the list of ingredients you will need to make this simple and delicious vegan chocolate chip walnut banana bread.
Why Is My Banana Bread Not Moist?
There could be a few different reasons as to why your banana bread did not come out moist. First off, you may have not put enough liquid ingredients into your banana bread. If your batter is too thick and/or dry, the banana bread will turn out super dense rather than moist, light, and fluffy.
The other reason your banana bread may have turned out dry is because you either baked it too long or at too high of a temperature. I like to check my loaf a few times to make sure it’s rising and baking evenly.

- Cinnamon – The cinnamon adds a bit of spice to this moist and flavorful chocolate chip banana bread recipe.
- Baking Powder – The baking powder serves as the first key leavening agent you will need for this banana bread recipe. This ingredient ensures that the loaf rises and turns out nice and fluffy.
- Baking Soda – The baking soda is the other essential leavening agent that will be used to help your banana bread rise.
- Overripe Bananas – The overripe bananas should come as no surprise for this recipe. They will be mashed up and added to the banana bread for a ton of moisture, flavor, and sweetness.

Vegan Chocolate Chip Walnut Banana Bread
Ingredients
- 1 cup rolled oats (blended into a fine oat flour)
- 1 cup whole wheat flour (I used Bob's Red Mill brand)
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 4 medium overripe bananas
- 1/2 cup nut milk (I used unsweetened vanilla almond milk)
- 1/4 cup pure maple syrup
- 2 tbsp chocolate chips (I used dark chocolate chunks)
- 2 tbsp walnuts (finely chopped)
Instructions
- Preheat the oven to 350° F.
- In a large mixing bowl, combine the oat flour, whole wheat flour, cinnamon, baking powder, and baking soda.
- Thoroughly mash the bananas with a fork.
- In a small mixing bowl, combine the mashed bananas, nut milk, and pure maples syrup.
- Add the wet ingredients into the dry and mix to form a batter.
- Pour the banana bread mixture into a lined or greased loaf pan.
- Top the banana bread loaf with the chocolate chips and chopped walnuts.
- Bake the banana bread for about 40 minutes, or until a toothpick inserted comes out clean.
- Let the banana bread cool completely before removing it from the pan.
- Cut the banana bread into slices.
- Dig in and enjoy!
