Vegan Peanut Butter Chocolate Chip Muffins

Good morning friends! Today, I am sharing a simple, delicious, and moist chocolate chip protein muffin recipe with all of you. These muffins are packed with peanut butter and chocolate chip flavors, and they turn out super light and fluffy.

These muffins are also one of my new favorite post workout snacks. They sneak in some extra protein thanks to the chocolate protein powder, and they are one of the easiest recipes to meal prep and have ready to eat throughout the week.

Now, let’s dive into some logisitcs for this recipe, as well as the full list of ingredients you will need to make this peanut butter chocolate chip protein muffins recipe a smashing success.

How Do You Add Protein Powder To Muffins?

In order to add protein powder to your muffin recipe, there are a few things you should keep in mind. First off, you don’t want the protein powder to overpower your muffins. If you use too much, they can end up with a really strong protein powder flavor, which I personally don’t enjoy. I avoid this by using a mix of flours along with the protein powder. This also ensures that the muffins still come out light and fluffy as opposed to super dense.

Next, you have to decide what flavor you want to use. This is highly dependent on the flavor of muffins you are trying to create. Since this recipe is for peanut butter chocolate chip muffins, using a chocolate flavored protein powder is the way to go. If, for example, you wanted to make vanilla cake batter protein muffins, you would want to use a vanilla flavored protein powder.

Now that we have gotten through the logistics for this recipe, let’s go ahead and take a look at the list of ingredients you will need to make these protein muffins.

Vegan Peanut Butter Chocolate Chip Protein Muffins – Ingredients

  • Quick Oats – The quick oats are the first essential ingredient you will need for this muffin recipe. The oats are blended up to form a fine oat flour.
  • Whole Wheat Flour – The whole wheat flour combines with the oat flour to form the bulk of the dry base for this protein muffins recipe.
  • Chocolate Protein Powder – The chocolate protein powder sneaks extra protein and chocolate flavor into this protein muffin recipe. It is a crucial ingredient that you definitely don’t want to omit. I used the Orgain Simple protein powder in the chocolate peanut butter cup flavor. Orgain makes some of my favorite vegan protein powders, so I highly recommend them.
  • Miniature Semi-Sweet Chocolate Chips – The miniature semi-sweet chocolate chips add a ton of sweetness and rich chocolate flavor to this recipe. If you are looking for a good brand that makes vegan chocolate chips, I really like the Enjoy Life brand ones.
  • Baking Powder – The baking powder is the first leavening agent used in this recipe. It is necessary to ensure the muffins come out light and fluffy.
  • Baking Soda – The baking soda is the other important leavening agent used in this peanut butter chocolate chip protein muffins recipe.
  • Nut Milk – The nut milk serves as the main source of liquid used in this recipe. It adds flavor and creaminess to your muffins. I used unsweetened vanilla almond milk, but you can use whichever kind you have on hand or enjoy most.
  • Pure Maple Syrup – The pure maple syrup acts as the main source of sweetness for this protein muffin recipe.
  • Unsweetened Applesauce – The unsweetened applesauce adds both moisture and sweetness to this peanut butter chocolate chip protein muffin recipe. It is one of my favorite ingredients to use in baked goods.
  • Creamy Peanut Butter – The peanut butter should come as no surprise in this recipe. It serves as a source of fat to add both flavor and richness to these peanut butter chocolate chip protein muffins. I used creamy salted peanut butter from Trader Joe’s for this recipe.
