Happy Saturday friends! Today, I thought it would be fun to share a compiled list of five simple and delicious vegan breakfast ideas that I love to make for busy work days or slow weekend mornings. I have included both sweet and savory dishes, as I know some people prefer one over the other. I personally am team sweet breakfast all the way 🙂
These breakfast options are not only super tasty, but they are also packed with nutrients. I love a nutritious, delicious, and filling breakfast to start my day with. So, I am excited to share five different plant based dishes with all of you. The first three meals on the list are some of my go-to breakfast options for busy work days, and the last two take a bit longer to cook. So, I will typically save those for Saturday and Sunday mornings when I have a lot more time to cook. Now, let’s jump right into the list of five of my favorite simple and delicious vegan breakfast ideas!
Vegan Breakfast #1 – Oatmeal
I had to include oatmeal as the first item on this list because it is one of my all-time favorite meals. It is super quick and easy to make, filling, and packed with nutrients. Plus, I never seem to get bored of it. Oatmeal is one of those meals that you can easily customize with different toppings. Even if I stray away from it for a little while, I always seem to find my way back to it. I have made baked oats, overnight oats, microwave oats, stovetop oats, and the list goes on. I love to top my oatmeal with peanut butter and fresh fruit (or frozen fruit that I’ve heated in the microwave). Vegan Breakfast #2 – Peanut Butter & Jelly Toast
Another one of my favorite vegan breakfast foods is peanut butter and jelly toast. This option is super easy to make. It is perfect for those days when you are in a rush and you have to whip up something quick before heading out the door. I like to toast up a couple pieces of fresh sourdough bread, spread on a thick layer of creamy peanut butter, and then add on a layer of my homemade blueberry chia seed jam. Of course, you can also use storebought jelly/jam. However, I love the freshness of homemade jam, and my blueberry chia seed jam recipe is surprisingly easy to make. Peanut butter and jelly toast also serves as a great mid-day snack. I frequently eat some pb&j toast around two or three in the afternoon so that I don’t go hungry between lunch and dinner.
Vegan Breakfast #3 – Thick Smoothie (Bowl)
A super thick smoothie or smoothie bowl is yet another one of my favorite quick and easy vegan breakfast options. I love the texture and sweet flavor that a thick smoothie (or smoothie bowl) provides. Plus, you can add a ton of different toppings like nuts, nut butter, granola, seeds, etc. The possibilities are endless. Vegan Breakfast #4 – Baked Donuts
This fourth option is definitely one that I reserve for weekends. This is because it takes a bit longer to whip up. Baked donuts are one of my favorite sweet breakfast foods. I have made many different flavor combinations, each of which is unique and delicious. If I’m having a donut for breakfast during the work week, then I probaby meal prepped a batch over the weekend. I simply don’t have enough time in the morning on work days to bake. Regardless, donuts are one of those foods that I have always really loved. Vegan Breakfast #5 – Tofu Scramble
This final option is for those of you who prefer savory foods for breakfast. For the most part, I like to eat something sweet for breakfast. However, if I’m craving something savory, I will almost always go for avocado toast, a breakfast burrito, or a tofu scramble. My vegan tofu scramble recipe is super easy to make and packed with protein. I love to serve it up with avocado toast for a more substantial breakfast.
